4 heaping tablespoons of smooth peanut butter (~120-150 g)
2 eggs, beaten
tsp vanilla extract
55 g sugar
125 g wheat flour
½ teaspoon baking powder
A large handful of dark chocolate nibs / pieces (~45 g)
+/- some flake salt for the top
Mix the flour with baking powder, set aside.
Transfer the peanut butter to a bowl, add the eggs, vanilla extract and sugar, mix until well incorporated.
Add the peanut butter mass to the dry ingredients and combine them.
Then add the chocolate pieces and mix them into the prepared dough. Knead the dough with your hands until everything becomes shiny, the dough does not separate and all the flour is thoroughly mixed (~3-4 minutes).
Make 16-18 little balls from the dough, put them on a baking tray with a baking paper and press them down with the bottom of a glass or your palm.
If the cookies are not quite round, you can make them rounder by placing the other side of the glass over them and spinning them a little.
Bake at 180 degrees in a pre-heated oven for 10 - 15 minutes. When ready, cool completely and then serve.
