4 overripe bananas, mashed
1 banana for decoration, whole
50 g sugar
1 - 2 tbsp butter, melted
1 egg
1/2 tsp vanilla extract
1 tsp baking soda (bicarbonate soda)
a pinch of salt
150 - 200 g flour
+/- a handful of chocolate pieces, chopped
+/- a handful of walnuts, chopped
I recommend mashing the bananas with a fork and leaving some chunks for best results.
Mix the mashed bananas with the sugar, a pinch of salt, melted butter, the egg and vanilla extract.
Then add the baking soda to it.
Fold in the flour, mix well.
Add the walnuts or pieces of chocolate and integrate.
Pour the dough into a loaf shaped baking mould lined with baking paper.
Cut the remaining banana in half and put it on the top of the bread.
Bake in a preheated oven at 180 degrees for 50 minutes.
I know it's tempting to have it right away, but it's best to allow it cool down a bit to set.
