This is for the dark chocolate lovers.
1 medium zucchini (~ 350 g), grated
2 large eggs
200 g wheat flour
45 -50 g of cocoa powder
1 tsp baking soda
50 g regular sugar
60 g brown sugar
2 tbsp butter, melted
2 tbsp coffee
+/- 1 tsp vanilla extract
+/- 1 pinch of salt
50 g dark chocolate nibs or pieces, chopped
Beat the eggs with sugar and vanilla extract, then add melted butter and mix well.
After grating the zucchini, squeeze out the liquid thoroughly with your hands (about 250 g of zucchini should remain after).
Add the grated zucchini to the eggs and mix it in.
Combine flour with cocoa, baking soda and a pinch of salt and add to the liquid ingredients, mix well.
Add in the chocolate nibs, integrate well and let it rest for 5 minutes.
Then tranfer the dough to a loaf shaped baking mould lined with baking paper. Add some chocolate nibs on top.
Bake in a preheated oven at 180 degrees for 50 minutes - 1 hour.
The baking time may vary slightly depending on the oven so keep an eye on it towards the end.
P.s. brown sugar is used too because it retains moisture in the product better, but it is not really to be considered healthier than the regular. This is still a cake, but we have integrated some fiber and minerals with the zucchini.
