This is a recipe for a side salad. To transform this into a complete meal, serve it together with some cooked protein and grains.
1/2 a small watermelon (around 1 kg), cubed
1 - 2 large cucumbers
50 g arugula
For the dressing:
1 lime juiced and zested
a bunch of mint, finely chopped
1 tbsp olive oil
For serving:
50 g Feta or similar cheese, crumbled
+/- lime wedges
To prepare the dressing, mix all of the ingredients well.
Toss the watermelon with the dressing first, then mix in the rest of the ingredients.
Top with some crumbled feta cheese and serve with lime wedges.
