1 carrot, grated
1/2 long cucumber, chopped
250 g red cabbage, grated or chopped
1/2 red bell pepper, chopped
200 g edamame beans
2 tbsp sesame seeds (optional)
a handful of mint, chopped
a handful of coriander, chopped (optional)
3 tbsp peanut butter
3 tbsp soy sauce, low sodium
1 tsp liquid honey
50 ml water
1/3 tsp 5 spice powder
a handful of fresh mint
1 tbsp sesame seeds
Mix all of the chopped vegetables and beans in a large bowl.
To prepare the dressing, mix or whisk all of the ingredients well.
Add the dressing to the bowl and incorporate well.
