600 g salmon, cut in cubes
1 tsp sweet paprika powder
1 tsp onion powder
1 tsp garlic powder
a pinch of cayenne pepper
1 tsp dried thyme
a pinch of salt
olive oil for cooking
For the salsa
200 g strawberries, chopped
1 ripe mango, pitted and chopped
1/4 red onion, finely chopped
a bunch of cilantro, finely chopped
1/2 lime, juiced
+/- chili flakes to taste
For serving
200 g rice (dry weight, I used wild rice), cooked
To prepare the salsa, combine strawberries with mango, red onion, cilantro and mix in the lime juice. Then you can add chili flakes, adjust to your liking of spiciness.
Add all of the spices to the salmon and rub them in a bit to cover evenly.
Heat a pan with a small amount of oil and add in the salmon. Cook until golden on both sides.
Serve with the salsa and cooked rice, top with some fresh cilantro leaves.
Time: 15-20 min prep + ~ 30 min cooking (depending on the rice)
