1 large / 150 g pre-cooked chicken breast (can be rotisserie), chopped
400 g boiled or canned small white beans, drained and rinsed
1/2 long cucumber, chopped
1 yellow or other bell pepper, chopped
1/2 small red onion, finely chopped
3 sundried tomatoes, finely chopped
3 tbsp olive oil
2 tsp runny (liquid) honey
70 ml lemon juice / 1 lemon, juiced
1 tsp Dijon mustard
1 tsp dry oregano
1 tsp mustard seeds (optional)
a bunch of fresh basil (optional)
Mix all of the chopped vegetables, chicken and beans in a large bowl.
To prepare the dressing, first whisk the oil with honey, then gradually add the lemon juice while whisking. Once the juice and oil has mixed well, add the mustard, mix again, then add oregano, mustards seeds and mix once more.
Add the dressing to the bowl and incorporate well.
Serve with fresh basil.
