240 g white beans
350 g white cabbage / ¼ small cabbage, finely chopped
½ long cucumber, chopped
1 green or yellow bell pepper, chopped
15 g fresh parsley
10 g fresh peppermint
10 g fresh cilantro
1 ripe avocado, pitted and peeled
1 tbsp capers
3 tbsp extra virgin olive oil
1 tsp honey, liquid
1 lime, juiced
fresh herbs (optional)
To prepare the dressing, blend all of its ingredients until well incorporated and smooth.
Mix all of the chopped vegetables and beans together with the sauce.
Serve with more fresh herbs.
