250 g salmon, cooked and cooled
85 g rucola salad
100 g orzo, also called risoni (dry weight), cooked
25 ml olive oil
1/2 orange, juiced
1/2 lemon, juiced
1 tsp Dijon mustard
1/2 tbsp honey (optional)
berries (optional)
seeds (optional)
To make the dressing, mix all of the ingredients well.
Mix cooked orzo with the dressing, then incorporate the rucola.
Finally, shred and add salmon.
Decorate with berries and seeds to your liking.
