240 g boiled or canned black beans, drained and rinsed
1 bell pepper, chopped
70 g boiled or canned corn, drained
1/2 red onion, finely chopped
3 tbsp olive oil
1 tsp runny (liquid) honey
1 lime, juiced and zested
1 bunch of cilantro, finely chopped
fresh cilantro
Mix all of the chopped vegetables and beans in a large bowl.
To prepare the dressing, first whisk the oil with honey, then gradually add the lime juice while whisking. Once the juice and oil has mixed well, add the zest and cilantro, mix again.
Add the dressing to the bowl and incorporate well.
Serve with more fresh cilantro.
