3 carrots, cut in ribbons with vegetable peeler
1 tbsp sesame seeds
1 thumb sized piece of ginger, finely grated or minced
1 tbsp olive oil
1 tbsp low sodium soy sauce
½ tsp honey, liquid
1/3 lime, juiced
sesame seeds
chives, finely chopped
To prepare the dressing, mix all of the ingredients well.
Then, add the dressing to the carrots and coat them well.
Serve topped with chives and sesame seeds.
If you have time to prepare it a day ahead of time, this recipe gets even better if it has some time in the fridge.
